A summer smoothie bowl recipe

Smoothies and smoothie bowls (which are thicker, so you can eat them with a spoon from a bowl, giving you the option of adding toppings) might seem like one of the easiest dishes to make, but we’ve found they can be deceptively tricky to get right. Which is why we always prefer to follow a recipe when we make ours at home, to make sure the ratios of fruit, liquid and natural sweetness are just right. This one is a new favourite, and is from the summer menu at our café, The Provenist, in Bath.

Makes enough for two

What you’ll need

  • 2 bananas peeled, chopped and frozen
  • 200g mixed frozen berries
  • 1 tbsp maple syrup
  • 250ml plant-based milk
  • A few topping ideas
  • Granola
  • Fresh fruit
  • Nuts
  • Chia seeds
  • Coconut flakes

What to do

1 Place all your smoothie ingredients into a blender or food processor and blend on a high setting, stopping occasionally to scrape down the sides, until you have an ice cream-like consistency.

2 Divide the smoothie between two bowls and top however you’d like. At The Provenist, we serve ours with homemade granola, sliced fresh berries and a scattering of chia seeds.

You could always

…add more plant-based milk to your smoothie to make it into a drinkable consistency, in case you’d like to take it on the go with you.

You might also need to add a little more liquid so everything blends well, it all depends on your appliance. Just be sure not to add too much if you’re planning on eating this recipe as a smoothie bowl, as you want it to be a spoon-able consistency.
